Crispy Ethiopian Mozzarella Croquettes
A crispy French-inspired twist on traditional cheese croquettes, incorporating the flavors of Ethiopia.
Ingredients
- β2 tablespoons jjigae (Ethiopian chili paste)adjust to taste
- β1 cup, shredded nutty cheese (or mozzarella)any melty cheese works
- β1/2 cup all-purpose flour
- β1/2 cup crispy breadcrumbs

In a bowl, mix together jjigae paste, nutty cheese, flour, and eggs until well combined.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

Heat a non-stick pan with a small amount of oil over medium heat.

Using a spoon, drop small portions of the cheese mixture into the pan.

Shape the mixture into small patties. If the mixture is too wet, add a bit more flour.
