Moroccan Chickpea Tagine
A hearty, smoky Moroccan stew made with chickpeas and spices, slow-cooked to perfection. Serve over couscous for a flavorful and nutritious meal.
Ingredients
- β1 can (14.5 oz) Chickpeasdrained and rinsed
- β2 tbsp Olive oilsmoked or regular
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 tsp Gingergrated
- β1 tsp Cuminground
- β1 tsp Corianderground
- β1/4 tsp Cayenne pepperoptional
- βto taste Salt
- βto taste Black pepper
- βfor garnish Chopped fresh parsleyoptional
Instructions

Heat the olive oil in a large Dutch oven or saucepan over medium heat.

Add the onion and cook, stirring occasionally, until softened and lightly browned, about 8 minutes.

Add the garlic, ginger, cumin, coriander, and cayenne pepper (if using). Cook, stirring constantly, for 1 minute.

Stir in the chickpeas, salt, and black pepper. Cook for 1-2 minutes.

Add 2 cups of water to the pot and bring to a simmer.

Reduce heat to low and cook, covered, for 20-25 minutes or until the flavors have melded together and the chickpeas are tender.

Taste and adjust the seasoning as needed.

Serve the tagine hot, garnished with chopped fresh parsley (if using).
