French Beef Stew
Hearty French beef stew made with tender beef and flavorful vegetables.
Ingredients
- β1 1/2 pounds Beef Stew MeatCut into 1 1/2-inch cubes
- β2 medium OnionChopped
- β4 medium CarrotsChopped
- β3 medium PotatoesChopped
- β1 cup MushroomsSliced
- β1 cup Red WineDry red wine
- β2 cups Beef BrothLow-sodium
- β2 tablespoons Tomato PasteDissolved in a little water
- β2 sprigs ThymeFresh or 1 teaspoon dried
- β1 teaspoon SaltTo taste
- β1/2 teaspoon Black PepperTo taste

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef cubes in batches until browned on all sides.

Remove the browned beef from the pot and set aside.

Reduce the heat to medium and add the chopped onion to the pot.

Cook the onion until softened and lightly browned.

Add the chopped carrots and potatoes to the pot.

Cook for 5 minutes, stirring occasionally.

Add the sliced mushrooms to the pot and cook for 2 minutes.

Add the red wine to the pot and cook until the liquid is almost completely reduced.

Add the beef broth, tomato paste, thyme, salt, and pepper to the pot.

Return the browned beef to the pot and bring to a boil.

Cover the pot and transfer it to the oven.
