Tunisian Chickpea Casserole
A hearty, flavorful casserole made with chickpeas, inspired by the cuisine of Tunisia. This dish is perfect for a weeknight dinner.
Ingredients
- β1 can (15 oz) chickpeasdrained and rinsed
- β1 small casserolebroken into pieces
- β2 tbsp tunisianspice blend
- β2 tbsp olive oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β2 tbsp tomato paste
- β1 can (14 oz) diced tomatoes
- βto taste salt
- βto taste black pepper

Preheat oven to 375Β°F (190Β°C).

Heat oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

Add tomato paste and cook for 1 minute.

Stir in Tunisian spice blend, salt, and pepper. Cook for 1 minute.

Add chickpeas, diced tomatoes, and casseroles. Stir to combine.

Transfer mixture to a 9x13 inch baking dish.

Cover with aluminum foil and bake for 25 minutes.

Remove foil and continue baking for an additional 10-15 minutes, or until hot and bubbly.
