Vegan Tunisian Chickpea Casserole
A flavorful and nutritious casserole made with chickpeas, inspired by the spices of Tunisia. This easy-to-make dish is perfect for a weeknight dinner.
Ingredients
- β1 can (15 oz) chickpeasdrained and rinsed
- β2 bell peppersany color
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tsp tunisian spice blendor to taste
- β2 tbsp olive oilplus more for greasing the dish
- β1/4 cup chopped fresh parsleyoptional

Preheat the oven to 375Β°F (190Β°C).

Grease a 9x13 inch baking dish with olive oil.

In a large pan, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the bell peppers and cook until tender, about 5 minutes.

Add the garlic, tunisian spice blend, and chickpeas. Cook for 1-2 minutes, stirring constantly.

Transfer the mixture to the prepared baking dish.

If using parsley, sprinkle it on top of the casserole.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the casserole is hot and the top is lightly browned.
