Lemongrass Chicken Fajitas
A twist on traditional fajitas, this dish combines the bright flavors of lemongrass with the spices of Mexican cuisine. Served with sautéed chicken and noodles.
Ingredients

- ●2 stalks lemongrasschopped
- ●8 ounces noodlesrice noodles
- ●1 red bell peppersliced
- ●1 onionsliced
- ●1 teaspoon cuminground
- ●1 teaspoon chili powderground
- ●1/2 teaspoon garlic powderground
- ●1/2 teaspoon saltto taste
- ●1/4 teaspoon pepperto taste

Heat 1 tablespoon of oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the lemongrass, red bell pepper, and onion to the skillet and cook until the vegetables are tender, about 5 minutes.

Add the cumin, chili powder, and garlic powder to the skillet and cook for 1 minute.
