French-Style Banh Mi Tofu Sandwich
A fusion twist on the classic French baguette, featuring crispy tofu, fresh herbs, and a hint of Vietnamese flavors.
Ingredients
- β1 block (14 oz) TofuExtra-firm, drained and cut into 1-inch cubes
- β1 Bun (French baguette)Split in half lengthwise
- β2 tbsp Vietnamese-style cha (spicy chili sauce)Available in most Asian markets
- β1/4 cup Fresh cilantroChopped
- β2 tbsp Mindful mayonnaise (or regular mayonnaise)
- β1/4 cup Briny pickled carrotsAvailable in most Asian markets
- β1/4 cup Fresh cucumberSliced
- β1/4 cup Fresh mint leavesChopped
- β Salt and pepper

Preheat a non-stick skillet or wok over medium-high heat.

Add the tofu and cook until golden brown, about 5-7 minutes.

Meanwhile, toast the baguette by grilling it for a few minutes or baking it in the oven at 350Β°F (175Β°C) for 5 minutes.

Spread the mayonnaise on the toasted baguette.

Add the cooked tofu, pickled carrots, cucumber, mint leaves, and chili sauce on top of the mayonnaise.
