Satay Glazed Fish
A Malaysian-inspired dish featuring fish glazed with a sweet and spicy satay sauce. Perfect for a quick weeknight dinner.
Ingredients
- β400g Fish fillets (4 servings)
- β200g Satay saucestore-bought or homemade
- β1 tsp Mildly sweet chili flakes
- β1 tsp Malaysian curry powder
- β2 tbsp Lime juice
- β2 tbsp Coconut oil
- β1/4 cup Fresh coriander leaves
- βto taste Salt
Instructions

Preheat oven to 200Β°C/400Β°F.

Season fish fillets with salt and Malaysian curry powder.

Heat coconut oil in a pan over medium heat. Add fish fillets and cook for 2-3 minutes on each side.

Transfer fish to a baking sheet and bake for 8-10 minutes, or until cooked through.

While fish is baking, heat satay sauce in a saucepan over low heat.

Add mildly sweet chili flakes to the saucepan and stir to combine.

Brush the satay sauce mixture over the baked fish fillets.

Return fish to the oven for an additional 2-3 minutes, or until the glaze is caramelized.

Garnish with fresh coriander leaves and serve with a squeeze of lime juice.
