Spicy Jamaican Chicken Skewers
A fusion of Jamaican jerk seasoning and Indian spices, these skewers make for a flavorful and spicy main course.

- β1 pound Chicken breastboneless and skinless
- β2 tablespoons Jamaican jerk seasoning
- β2 inches Gingerfresh
- β3 cloves Garlicminced
- β1/4 cup Coconut milk
- β1 teaspoon Indian chili powder
- β2 tablespoons Lime juice
- β1 tablespoon Honey
- β1 tablespoon Vegetable oil
- β1 cup Red onionthinly sliced

Preheat grill to 400Β°F (200Β°C).

In a blender or food processor, combine jerk seasoning, ginger, garlic, coconut milk, chili powder, lime juice, and honey. Blend until smooth.

Add the blended marinade to a large bowl. Add the chicken breast and marinate for at least 30 minutes.

Thread the marinated chicken and red onion onto skewers.

Brush the grill with vegetable oil to prevent sticking.
