Spicy Elote Italian Corn Fritters

Ingredients
- β1 cup Cornfresh or canned
- β1/2 cup Mildly Spicy Elotestore-bought or homemade
- β1 cup Flourall-purpose
- β1 Egglarge
- β1/2 cup Parmesan Cheesegrated
- β1 tsp Saltto taste
- β1/2 tsp Black Pepperto taste
- β1/4 cup Breadcrumbsplain

Instructions

In a large bowl, combine corn, elote, flour, egg, parmesan cheese, salt, and black pepper. Mix well.

Add breadcrumbs and mix until just combined.

Heat about 1/2 inch of olive oil in a large skillet over medium-high heat.

Using a 1/4 cup measuring cup, scoop the corn mixture into the oil and flatten slightly.

Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
