Vegetarian Gyoza Stir Fry
A twist on traditional gyoza, this stir fry features a variety of vegetables and savory flavors. Serve with your favorite dipping sauce.
Ingredients
- β2 tablespoons mildly flavored soy sauce
- β1 cup sour kimchi (vegetarian)
- β2 tablespoons japanese rice vinegar
- β2 cups pork-free vegetable broth
- β12-15 wrappers gyoza wrappers (vegetarian)
- β1 cup shredded carrots
- β1 cup sliced mushrooms
- β1/4 cup chopped scallions
- β1 tablespoon sesame oil
- β2 tablespoons toasted sesame seeds (optional)
Instructions

Heat the sesame oil in a large skillet over medium-high heat.

Add the shredded carrots and cook for 3-4 minutes.

Add the sliced mushrooms and cook until they release their liquid and start to brown.

Add the chopped scallions and cook for an additional minute.

Add the pork-free vegetable broth and bring the mixture to a simmer.

Reduce the heat to medium-low and let the mixture simmer for 5-7 minutes.

While the mixture is simmering, prepare the gyoza by placing a small spoonful of the vegetable mixture onto the center of a gyoza wrapper.

Dip your finger in a small amount of water and run it along the edges of the wrapper.

Fold the wrapper into a triangle by bringing the two opposite corners together to form a point.

Press the edges together to seal the gyoza and repeat with the remaining wrappers and filling.

When the vegetable mixture has finished simmering, add the gyoza to the skillet and cook for 2-3 minutes on each side, or until they are golden brown and crispy.
