Portuguese Paella with Roasted Tomatoes
A traditional Portuguese-inspired paella recipe featuring roasted tomatoes for added depth of flavor.
Ingredients
- β1 cup Saffron rice
- β1/2 cup Mildly spiced chorizo
- β2 Roasted tomatoes
- β1 tsp Portuguese smoked paprika
- β3 cloves Garlic
- β1 tsp Salt
- β1 tsp Black pepper
- β2 tbsp Olive oil
- β1 Red bell pepper
Instructions

Heat the olive oil in a large paella pan over medium heat.

Add the chorizo and cook, breaking it up with a spoon, until browned, about 5 minutes.

Add the garlic, smoked paprika, salt, and black pepper, and cook for 1 minute.

Add the roasted tomatoes and cook for an additional 2 minutes.

Add the saffron rice, stirring to coat the rice in the oil and mix with the chorizo and tomato mixture.

Add 2 cups of water to the pan and bring to a boil.

Reduce the heat to low and simmer, covered, for 20 minutes.

Add the red bell pepper to the pan and continue to simmer for an additional 5 minutes.

Remove from heat and let rest for 5 minutes before serving.

Serve hot, garnished with chopped fresh parsley if desired.
