Chinese-Style Paella with Tomato and Portuguese Sausage
A fusion dish that brings together the flavors of Chinese Szechuan cuisine and the bold spices of Spanish paella, featuring roasted Portuguese sausage and fresh tomatoes.
Ingredients
- β1 lb, sliced roasted portuguese sausage
- β2 large, diced fresh tomatoes
- β1 cup mildly seasoned rice
- β2 tbsp vegetable oil
- β3 cloves, minced garlic
- β1-inch piece, grated ginger
- β1 tsp Szechuan peppercorns
- β2 tbsp soy sauce
- β1 tsp oyster sauce (optional)
- β1 tsp sesame oil

Heat 1 tablespoon of vegetable oil in a large paella pan or skillet over medium-high heat.

Add the sliced Portuguese sausage and cook until browned, about 5 minutes.

Remove the sausage from the pan and set aside.

Add the remaining 1 tablespoon of vegetable oil to the pan.

Add the minced garlic and grated ginger and cook until fragrant, about 1 minute.

Add the diced tomatoes and cook until they start to break down, about 3-4 minutes.

Add the Szechuan peppercorns and cook for 1 minute.

Add the mildly seasoned rice to the pan and stir to coat the rice in the oil and mix with the vegetables.

Add the soy sauce and oyster sauce (if using) to the pan and stir to combine.

Add 2 cups of water to the pan and bring to a boil.

Add the browned Portuguese sausage back to the pan and stir to combine.

Reduce the heat to low and simmer, covered, for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.
