Egyptian Green Bean Tagine
A flavorful and aromatic North African stew made with green beans, spices, and a touch of sweetness.
Ingredients
- β1 pound, trimmed Green beansFresh or frozen
- β2 teaspoons Tagine spice blendAvailable in most Middle Eastern stores or online
- β1, diced Roasted red pepperMildly sweet and smoky
- β1, chopped Mild onionCook until translucent
- β2, pitted Chewy Egyptian datesOptional, for added sweetness
- β2 tablespoons Olive oilFor cooking and finishing the dish
- βto taste SaltAdjust to balance flavors

Heat 1 tablespoon of olive oil in a large clay or ceramic tagine pot over medium heat.

Add the chopped onion and cook until translucent, about 5 minutes.

Add the diced roasted red pepper and cook for an additional 2 minutes.

Add the green beans, tagine spice blend, and pitted dates (if using). Stir to combine.

Pour in enough water to cover the green beans and bring to a simmer.

Reduce heat to low, cover the pot, and cook for 20-25 minutes or until the green beans are tender.
