Portuguese Cherry Pasta Bake
A delicious and easy-to-make pasta bake with a portuguese twist, featuring sweet cherry tomatoes and a hint of earthy flavor.
Ingredients
- ●8 oz pastapenne or fusilli work well
- ●1 pint cherry tomatoeshalved or quartered
- ●1 lb mildly spicy sausage (optional)such as linguiça or chorizo
- ●8 oz earthly mushroomssuch as portobello or cremini
- ●3 cloves garlicminced
- ●1/4 cup olive oilfor cooking
- ●1/2 cup grated parmesanfor serving
- ●1/4 cup fresh basilchopped, for garnish

Preheat oven to 400°F (200°C).

Cook pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium-high heat.

Add sausage (if using) and cook until browned, about 3-4 minutes.

Add mushrooms and cook until tender, about 5 minutes.

Add garlic and cook for an additional minute.

Stir in cherry tomatoes and cook until they start to release their juices.

In a large bowl, combine cooked pasta, sausage mixture, and a pinch of salt and pepper.
