Mexican Earthy Pasta Bake
A hearty pasta bake with earthy flavors inspired by Mexican cuisine. This comforting dish is perfect for a weeknight dinner.
Ingredients
- β8 oz pasta
- β1 cup mildly earthy mushroomssuch as cremini or shiitake
- β1 cup cherry tomatoeshalved
- β1/2 cup portuguese cheesegrated
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 tsp cumin
- β1 tsp chili powder
- βto taste salt
- βto taste black pepper

Preheat the oven to 375Β°F (190Β°C).

Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat 1 tablespoon of oil over medium heat. Add the onion and garlic and cook until softened, about 3-4 minutes.

Add the mushrooms, cumin, and chili powder to the skillet. Cook for an additional 2-3 minutes, until the mushrooms release their liquid and start to brown.

Add the cherry tomatoes to the skillet and cook for 2-3 minutes, until they start to release their juices.

Stir in the cooked pasta, portuguese cheese, salt, and black pepper. Cook for an additional 2-3 minutes, until the cheese is melted and the pasta is well coated.

Transfer the pasta mixture to a baking dish and top with additional portuguese cheese if desired.

Bake in the preheated oven for 15-20 minutes, until the top is golden brown and the cheese is bubbly.
