Spicy Ethiopian Beef Kitfo
A traditional Ethiopian dish made with raw ground beef, mildly spicy and flavored with a variety of spices. Serve with traditional Ethiopian bread or injera.
Ingredients
- β1 pound Ground beefRaw, not cooked
- β2 tablespoons Niter kibbeh (Ethiopian clarified butter)Or substitute with regular butter
- β1 tablespoon Mitmita (Ethiopian spice mix)Available at most Ethiopian or African markets
- β1 small Chopped onionRaw, not cooked
- β1/4 cup Chopped fresh cilantroOptional, for garnish
- βto taste Salt
- βto taste Black pepper
- β1-2 teaspoons Mildly spicy pepper (such as habanero or scotch bonnet)Optional, adjust to taste

1. In a large bowl, combine ground beef, niter kibbeh, mitmita, chopped onion, salt, black pepper, and mildly spicy pepper (if using). Mix well with your hands until just combined.

2. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

3. Just before serving, garnish with chopped fresh cilantro (if using).

4. Serve the kitfo raw, with traditional Ethiopian bread or injera.

5. Traditionally, kitfo is eaten with the hands, tearing the bread or injera into small pieces and using them to scoop up the raw meat.
