Tagine Chicken and Bread
A North African-inspired dish featuring chicken cooked in a flavorful tagine sauce served with crusty bread.
Ingredients
- β1 pound chicken breastboneless and skinless
- β2 teaspoons tagine spice blendstore-bought or homemade
- β2 tablespoons olive oilextra virgin
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup chicken brothlow-sodium
- β1 can (14.5 oz) mild tomatoesdiced
- β1/4 cup fresh parsleychopped
- β1 baguette crusty breadsliced

Heat the olive oil in a large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the chicken and cook until browned on all sides, about 5-6 minutes.

Add the tagine spice blend and cook for 1 minute.

Pour in the chicken broth and bring to a boil.

Reduce the heat to low and simmer, covered, until the chicken is cooked through, about 20-25 minutes.

Stir in the diced tomatoes and cook for an additional 2-3 minutes.
