Smoky Empanadas with Tamarind Salsa
A twist on traditional empanadas, these smoky empanadas are filled with a tangy tamarind salsa, giving them a unique flavor and texture.
Ingredients
- β2 cups mellow empanada doughhomemade or store-bought
- β1 cup smoky cheeseshredded, such as cheddar or Monterey Jack
- β1/4 cup tamarind pasteor 1 tablespoon tamarind puree
- β1 medium oniondiced
- β1 teaspoon cuminground
- β1/2 teaspoon saltto taste
- β1 cup tamarind salsasee below for recipe
- β1/4 cup vegan sour creamoptional

Preheat oven to 375Β°F (190Β°C).

Roll out the empanada dough to a thickness of about 1/8 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

Place a tablespoon of the smoky cheese in the center of each dough circle.

Top with a sprinkle of cumin and a pinch of salt.

Fold the dough in half to form a half-moon shape, and press the edges together to seal.

Place the empanadas on a baking sheet lined with parchment paper.

Brush the tops with a little water and bake for 15-20 minutes, or until golden brown.

While the empanadas are baking, prepare the tamarind salsa by mixing together the tamarind paste, onion, and cumin.
