Shio Ramen Soup
A Japanese-inspired shio ramen soup made with a rich pork broth, topped with a soft-boiled egg and sliced pork.
Ingredients
- β200g Ramen noodles
- β1kg Pork bonesyou can also use beef bones
- β2tsp Shio
- β2tbsp Vegetable oil
- β2 cloves Garlic
- β2 slices Ginger
- β200g Pork bellyyou can also use pork shoulder
- β1 Soft-boiled egg
- β1 bunch Green onions
- β1 tsp Sesame seeds

Heat the vegetable oil in a large pot over medium heat.

Add the garlic and ginger and sautΓ© until fragrant.

Add the pork bones and cook until browned.

Add 2L of water and bring to a boil.

Reduce the heat to low and simmer for 4 hours.

Strain the broth through a fine-mesh sieve into a clean pot.

Add the shio and stir to combine.

Cook the ramen noodles according to the package instructions.

Slice the pork belly into thin strips.

Cook the pork belly in a pan with a little oil until crispy.

Assemble the ramen by placing the noodles in a bowl, then topping with the pork belly, green onions, and soft-boiled egg.

Sprinkle with sesame seeds and serve.
