Grilled Pineapple and Coconut Cream Medley
A refreshing dessert that combines the sweetness of grilled pineapple with the creaminess of coconut cream.
Ingredients
- β1 can (14 oz) Coconut cream
- β1 cup Medley of tropical fruits (such as mango, kiwi, and pineapple)
- β4-6 Medjool dates
- βa few sprigs Fresh mint leaves
- β1 tablespoon Granulated sugar
- β2 tablespoons Lime juice
- β1/4 cup Shredded coconut

2. Cut the pineapple into wedges and brush with a little oil.

3. Grill the pineapple for 2-3 minutes per side, or until caramelized.

4. In a blender or food processor, combine coconut cream, medley of tropical fruits, medjool dates, fresh mint leaves, granulated sugar, and lime juice. Blend until smooth.
