Thai-Style Pan-Seared Fish with Stout Beer Glaze

Ingredients

- β2 tbsp Mediteranean Olive Oil
- β4 fillets Bake-Specific Cod Fillets
- β2 tbsp Thai Red Curry Paste
- βto taste Fish-Safe Salt
- βchopped Fresh Cilantro
- βto taste Sliced Fresh Thai Chilies
- β2 tbsp Mediteranean Juice of 1 Lemon

Heat olive oil in a large skillet over medium-high heat.

Add Thai red curry paste and stir for 1 minute.

Add cod fillets and cook for 3-4 minutes per side, or until cooked through.

While fish is cooking, reduce stout beer in a separate saucepan over medium heat until thickened, stirring occasionally.

Stir in fish-safe salt to taste.

Add reduced stout beer glaze to cooked fish and serve hot, garnished with chopped cilantro and sliced Thai chilies.
