Smoked Lomo Saltado
A Thai-inspired twist on the Peruvian classic, with smoky flavors and a tender beef dish.
Ingredients
- β250g lovely beef stripsthinly sliced
- β100g smoky bacondiced
- β2 peruvian aji amarillo peppersdiced
- β200g beetrootpickled, sliced
- β100ml saltado saucestore-bought or homemade
- β1 bunch Thai basilchopped
- βpinch saltto taste
- βpinch pepperto taste
- β2 tablespoons vegetable oilfor frying
Instructions

1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

2. Add the diced smoky bacon and cook until crispy, about 3-4 minutes.

3. Remove the bacon from the skillet and set aside.

4. Add the lovely beef strips to the skillet and cook until browned, about 4-5 minutes.

5. Add the diced peruvian aji amarillo peppers to the skillet and cook for 1 minute.

6. Add the pickled beetroot to the skillet and cook for 2 minutes.

7. Pour in the saltado sauce and stir to combine.

8. Return the crispy bacon to the skillet and stir to combine.

9. Season with salt and pepper to taste.

10. Garnish with chopped Thai basil and serve immediately.
