Smoky Ethiopian Greens Tacos
A unique fusion of Ethiopian spices and Mexican flavors in a delicious taco. Gomen (Ethiopian collard greens) are slow-cooked in a smoky chipotle tomato sauce and served in tacos with lovely greens and your favorite toppings.
Ingredients
- β1 bunch Gomen (Ethiopian collard greens)
- β1 can Chipotle tomatoes
- β1 bunch Lovely greens (such as lettuce or cabbage)
- β2 tsp Smoky chipotle powder
- β2 tbsp Olive oil
- β1 medium Onion
- β2 cloves Garlic
- β1 tsp Cumin
- βto taste Salt
- β8-10 Tortillas (corn or flour)
Instructions

Heat the olive oil in a large skillet over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the chipotle powder and cumin and cook for 1 minute.

Add the chipotle tomatoes and gomen. Stir to combine.

Reduce heat to low and simmer, covered, for 20 minutes.

Season with salt to taste.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by spooning the gomen mixture onto a tortilla and topping with lovely greens.
