French Mung Bean Pilaf
A comforting French-inspired pilaf dish made with mung beans, loomy, and sproutsukju.
Ingredients

- β2 cups loomy
- β1 cup sproutsukju
- β2 tablespoons beancanned or cooked
- β1 teaspoon pilafdried or instant
Instructions

Rinse the mung beans and soak them in water for at least 4 hours or overnight.

Drain and rinse the mung beans, then transfer them to a saucepan with 4 cups of water.

Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the mung beans are tender.

Heat oil in a large skillet over medium heat.

Add the loomy and cook until it's lightly toasted, about 5 minutes.

Add the sproutsukju and cook for another 2-3 minutes, until it's tender.

Stir in the cooked mung beans, bean, and pilaf.
