Hearty Mushroom Soup
A comforting and flavorful vegan soup made with sautéed mushrooms and a blend of spices.
Ingredients

- ●1 medium ovoli, diced Ovoli
- ●2 cups vegetable broth Soup
- ●1 tsp lively spice blend Lively
- ●1 tsp smoked paprika Portuguese
Instructions

Heat 2 tbsp olive oil in a large pot over medium heat.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the diced ovoli and cook for another 2-3 minutes.

Pour in the vegetable broth and bring the mixture to a simmer.

Reduce heat to low and let the soup simmer for 15-20 minutes.

Stir in the lively spice blend and smoked paprika. Season with salt and pepper to taste.

Use an immersion blender to puree the soup until smooth, or let it cool and puree it in a blender.

Serve hot, garnished with chopped fresh herbs if desired.
