Mushroom Soup with Ovoli
A warm and comforting Indian-inspired mushroom soup made with fresh ovoli and lively spices.
Ingredients

- ●2 ovolivinechopped
- ●2 cloves lively garlicminced
- ●2 tablespoons portuguese olive oil
- ●1 cup soup
- ●2 cups water
- ●to taste salt
- ●to taste black pepper
Instructions

Heat the olive oil in a large pan over medium heat.

Add the minced garlic and sauté for 1 minute.

Add the chopped ovoli and sauté for another minute.

Add the sliced mushrooms and cook until they release their moisture and start to brown.

Add the soup and water to the pan, and stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.

Season the soup with salt and black pepper to taste.

Serve the soup hot, garnished with chopped ovoli if desired.
