Norwegian Lamb Kebabs
A flavorful and aromatic dish originating from Norway, featuring lightly spiced lamb kebabs that are perfect for a quick dinner.

- ●1 1/2 pounds Lamb cubespreferably with a bit of fat for tenderness
- ●2 tablespoons Norwegian-style kebab spice mixavailable in most Scandinavian stores or online
- ●2 tablespoons Light olive oilfor brushing the kebabs
- ●1 large Onionthinly sliced
- ●1 large Bell pepperthinly sliced
- ●2 large Tomatohalved
- ●1/4 cup Fresh parsleychopped, for garnish
- ●4 Lemon wedgesfor serving

1. Preheat grill to medium-high heat (around 400°F/200°C).

2. Thread lamb cubes, onion, bell pepper, and tomato onto skewers, leaving a little space between each piece.

3. In a small bowl, mix together Norwegian-style kebab spice mix and olive oil.

4. Brush the spice mix mixture evenly onto both sides of the lamb cubes.

5. Grill the kebabs for 8-10 minutes per side, or until the lamb reaches an internal temperature of 145°F (63°C).
