Classic Greek Souvlaki
A traditional Greek dish made with marinated lamb skewers, perfect for a summer evening. Serve with a refreshing side of salad and pita bread.
Ingredients
- β500g Lamb shoulder, skinned and cubed
- β10-12 Souvlaki skewers
- β200g Greek yogurtfor marinade
- β100g Lemon juicefor marinade
- β100g Olive oilfor brushing
- β3 cloves Garlic, mincedfor marinade
- β1 large Onion, sliced
- β2 large Tomato, sliced
- β1 large Cucumber, sliced
- β1 large Red onion, thinly sliced

1. In a large bowl, whisk together yogurt, lemon juice, garlic, and 2 tablespoons olive oil.

2. Add the lamb cubes to the marinade and mix well to coat. Cover and refrigerate for at least 2 hours or overnight.

3. Preheat grill to medium-high heat.

4. Thread the marinated lamb onto the souvlaki skewers, leaving a small space between each piece.

5. Brush the grill with olive oil to prevent sticking.

6. Grill the souvlaki for 8-10 minutes, turning occasionally, until browned and cooked through.

7. Meanwhile, grill the onion, tomato, and cucumber slices for 2-3 minutes per side, until tender.

8. Warm pita bread by wrapping it in foil and heating it on the grill for a few minutes.

9. Assemble the souvlaki by placing a few skewers onto each pita, followed by a few slices of onion, tomato, and cucumber.
