Greek Loukoumades with Honey
A traditional Greek dessert consisting of crispy fried dough balls drizzled with honey, perfect for hot summer days.
Ingredients
- β1 cup all-purpose gluten-free flouror substitute with almond flour
- β1/2 cup light, fermented ricottaor substitute with plain yogurt
- β1/4 cup honeyplus extra for drizzling
- β1/4 teaspoon vanilla extractoptional
- β1/4 teaspoon baking sodagluten-free
- β1/8 teaspoon saltgluten-free
- β1 large egg eggsbeaten
- β1 cup club sodafor creating a light, airy dough

Combine flour, baking soda, and salt in a bowl.

In a separate bowl, whisk together ricotta, honey, and vanilla extract.

Add the beaten egg to the ricotta mixture and mix well.

Gradually add the dry ingredients to the wet ingredients, stirring until combined.

Add the club soda and mix until the dough comes together.

Using a spoon, drop small balls of dough into hot oil (around 350Β°F/175Β°C).

Fry the loukoumades until golden brown, about 3-4 minutes per side.

Using a slotted spoon, remove the loukoumades from the oil and place on paper towels to drain excess oil.
