Crispy Cornmeal Chicken Bites
A twist on traditional Chinese-style fried chicken, this recipe uses cornmeal for a crispy coating.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β1 cup cornmealfor coating
- β2 tablespoons light soy saucefor marinade
- β1 teaspoon spanish paprikafor flavor
- β1 cup pilaffor serving

1. In a medium bowl, whisk together soy sauce, paprika, and 1 tablespoon water.

2. Add the chicken to the marinade and toss to coat. Refrigerate for at least 30 minutes.

3. Preheat the oil in a deep frying pan or a deep fryer to 350Β°F (175Β°C).

4. In a shallow dish, mix together cornmeal and a pinch of salt.

5. Remove the chicken from the marinade, allowing any excess to drip off.

6. Dredge the chicken pieces in the cornmeal mixture, shaking off any excess.
