Doraji Tagine
A flavorful North African-inspired stew from India, featuring the unique flavor of doraji root. This hearty dish is perfect for a cold winter night.
Ingredients
- β2 medium roots dorajipeeled and sliced
- β2 tbsp algerianground spices
- β1 tagineuse of a tagine is optional, but recommended for authentic flavor
- β2 cups lightchicken or vegetable broth
- β1 small onion pungentchopped
- β2 tbsp vegetable oilfor cooking
- β1 small piece gingergrated
- β2 cloves garlicminced
- β2 tbsp tomato pasteoptional
- βto taste saltadjust as needed

Heat oil in a large pan over medium heat.

Add onion and cook until softened, about 3-4 minutes.

Add ginger and garlic and cook for an additional 1 minute.

Add sliced doraji and cook for 5 minutes, or until slightly tender.

Add algerian spices, tomato paste (if using), and salt. Stir to combine.

Pour in light ingredients and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes, or until doraji is tender.

Season with additional salt if needed.
