Moroccan Vegan Tagine
A flavorful and aromatic vegan stew originating from Morocco, made with a variety of spices and a special clay pot called a tagine.
Ingredients
- β1 can (14 oz) light coconut milk
- β2 stalks lemongrassminced
- β2 inches takraisliced
- β2 tsp tagine spice mix
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotspeeled and chopped
- β2 medium potatoespeeled and chopped
- β1 can (15 oz) chickpeas
- β1/4 cup fresh parsleychopped

Heat oil in the bottom of the tagine over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic, lemongrass, and takrai, and cook for another minute.

Add the carrots, potatoes, and chickpeas, and stir to combine.

Add the tagine spice mix, light coconut milk, and stir to combine.

Bring to a simmer, then reduce the heat to low and cook, covered, for 30 minutes.

Stir in chopped parsley and cook for an additional 5 minutes.

Serve hot, garnished with additional parsley if desired.
