Roasted Mediterranean Courgette Gratin
A flavorful and healthy vegetarian side dish made with roasted courgettes, topped with a light mediterranean sauce and served as a gratin.
Ingredients
- βsliced 2 medium courgettesany color
- βroasted 1/4 cup olive oillight
- βchopped 1 small onionany color
- βminced 2 cloves garliclight
- βcrumbled 1 cup grated halloumi cheesemediterranean
- βsprinkled 1 tbsp dried oreganoherbal
- βsprinkled 1 tsp paprikasmoked
- β Salt and pepper to taste

Preheat the oven to 180Β°C (350Β°F).

In a large bowl, toss the sliced courgettes with 2 tbsp of olive oil, salt, and pepper.

Spread the courgettes on a baking sheet and roast for 20-25 minutes or until tender.

In a large skillet, heat 1 tbsp of olive oil over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for 1 minute.

Stir in the crumbled halloumi cheese and cook until melted.

Add the roasted courgettes to the skillet and toss to combine.

Transfer the mixture to a baking dish and sprinkle with dried oregano and paprika.

Top with additional grated cheese if desired.
