Venezuelan Bowl
A delicious and flavorful dish with a Venezuelan twist, served in a bowl with various ingredients.
Ingredients
- β2 cups ricepreferably day-old rice
- β4 pieces umeboshisliced
- β1 can black beansdrained and rinsed
- β1 cup cornfresh or frozen
- β1 medium red oniondiced
- β1 medium tomatodiced
- β1 medium avocadodiced
- β1 tsp cuminground
- β1 tsp chili powderground
- β1/2 cup sour creamoptional

Cook the rice according to package instructions.

In a pan, heat 1 tablespoon of oil over medium heat.

Add the diced red onion and cook until translucent.

Add the diced tomato and cook for an additional 2 minutes.

Add the cooked black beans, corn, cumin, and chili powder to the pan. Stir well.

In a separate pan, heat 1 tablespoon of oil over medium heat.

Add the sliced umeboshi and cook until slightly caramelized.

To assemble the bowls, place a scoop of cooked rice in the bottom, followed by a spoonful of the bean and corn mixture.

Top with sliced umeboshi, diced avocado, and a dollop of sour cream (if using).
