Venezuelan Umeboshi Bowl
A keto twist on a traditional Venezuelan dish, featuring pickled umeboshi plums in a bowl with Lazy Sunday's special fried fish.
Ingredients
- β4 oz Lazy Sunday's special fried fish
- β1/4 cup Umeboshi plums
- β1/2 cup Venezuelan Bolivar rice
- β2 tbsp Sunday's special avocado oil
- β1/4 cup Fresh cilantro
- βto taste Sunday's special salt
- βto taste Lazy Sunday's special pepper

Preheat the oven to 400Β°F (200Β°C).

Season the fish with salt and pepper.

Bake the fish in the oven for 8-10 minutes or until cooked through.

While the fish is cooking, prepare the umeboshi plums by slicing them into thin wedges.

In a small bowl, mix together the sliced umeboshi plums and a squeeze of fresh lime juice.

To assemble the dish, place a serving of the Venezuelan Bolivar rice on a plate or in a bowl.

Top the rice with the baked fish, followed by the pickled umeboshi plum mixture.

Drizzle the Sunday's special avocado oil over the top of the dish and garnish with fresh cilantro.
