Beetroot and Hash Irish-Style Hash Browns
A twist on traditional hash browns, this French-inspired dish adds the earthy sweetness of beetroot and the comfort of Irish ingredients.
Ingredients

- β1 cup irish hashchopped
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 large potatopeeled and grated
- β2 eggsbeaten

- βto taste black pepper
- β2 tbsp lacto margarine or butter

Preheat oven to 400Β°F (200Β°C).

In a large bowl, combine grated beetroot, Irish hash, chopped onion, minced garlic, and grated potato.

In a separate bowl, whisk together beaten eggs, salt, and black pepper.

Pour the egg mixture over the beetroot mixture and stir until well combined.

Heat the lacto margarine or butter in a large skillet over medium heat.

Add the beetroot mixture to the skillet and press down with a spatula to form a flat layer.

Cook for 5-7 minutes or until the bottom is golden brown.

Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the top is golden brown.
