Saskatoon Berry Stew
A hearty and comforting stew made with saskatoon berries and a variety of other ingredients. Perfect for a cold winter's night.
Ingredients
- β2 cups saskatoon berriesfresh or frozen
- β1 medium onionchopped
- β2 medium carrotspeeled and chopped
- β2 medium potatoespeeled and chopped
- β2 cups beef brothlow sodium
- β2 tablespoons tomato pasteoptional
- β1 teaspoon glazed malaysian chili flakesoptional
Instructions

Heat 2 tablespoons of oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the chopped carrots and potatoes and cook for an additional 5 minutes.

Add the beef broth, tomato paste, and glazed malaysian chili flakes (if using).

Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes.

Add the saskatoon berries and continue to simmer for an additional 5-10 minutes, or until the berries have broken down and the stew has thickened.

Season with salt and pepper to taste.

Serve hot, garnished with fresh herbs if desired.
