Tonkotsu Ramen
A Japanese-inspired, rich and creamy pork broth ramen dish. The combination of pork slices, boiled egg, and vegetables makes for a satisfying meal.
Ingredients
- β2 lbs pork bonespreferably pork neck bones
- β2 tbsp shio kojiJapanese seasoning
- β1 package ramen noodlespreferably fresh or frozen
- β1 lb pork slicespreferably pork loin or belly
- β1 large onionsliced
- β3 cloves garlicminced
- β1 bunch green onionchopped
- β4 boiled eggboiled and sliced
- β1 bunch sliced scallionsfor garnish
- β2 tbsp sliced pork fatfor serving

1. In a large pot, combine pork bones, shio koji, and 4 cups of water.

2. Bring to a boil, then reduce heat to 180Β°F (82Β°C) and simmer for 4 hours.

3. Strain the broth and discard the solids.

4. Cook ramen noodles according to package instructions.

5. In a pan, cook sliced pork over medium heat until browned.

6. Add sliced onion and minced garlic to the pan and cook until softened.

7. Add cooked noodles to the pan and stir to combine.

8. Ladle the hot broth over the noodles and pork.

9. Top with boiled egg, green onion, and sliced scallions.
