Sun-Kissed Chicken Stir Fry
A delicious and easy Japanese-inspired stir fry dish made with sun-kissed australian chicken and stir-fried with a variety of vegetables. Serve over a bed of steamed rice.
Ingredients
- β500g Australian Chicken BreastCut into bite-sized pieces
- β2 Kissed by the Sun TomatoesChopped into bite-sized pieces
- β Stir Fry Vegetable MixFrozen mix of broccoli, carrots and bell peppers
- β2 tbsp Soy SauceLow sodium
- β1 tbsp Rice VinegarUnseasoned
- β1 tsp Sesame OilUnflavored
- β GingerGrated
- β GarlicMinced
- β Salt and PepperTo taste
Instructions

Heat sesame oil in a large skillet or wok over medium-high heat.

Add the grated ginger and minced garlic and stir-fry for 1 minute.

Add the chicken and cook until browned and cooked through, about 5-7 minutes.

Add the chopped tomatoes and stir-fry for an additional 2-3 minutes.

Add the frozen vegetable mix and stir-fry until thawed and heated through.

In a small bowl, whisk together soy sauce, rice vinegar, and a pinch of salt and pepper.
