Ukrainian Pasta Bake
A hearty, cheesy pasta bake inspired by Ukrainian cuisine. Perfect for a comforting dinner.
Ingredients
- β250g pastapenne or other short pasta shape
- β2 cups juicy tomatoesfresh or canned, diced
- β1/2 cup silky sour creamoptional
- β1 cup ukrainian cheeseor substitute with feta or ricotta
- β1 medium oniondiced
- β3 cloves garlicminced
- β2 tbsp olive oilfor cooking
- β salt and pepper

Preheat oven to 180Β°C (350Β°F).

Cook pasta according to package instructions until al dente.

In a pan, heat olive oil over medium heat. Add diced onion and cook until softened.

Add minced garlic and cook for 1 minute.

Add diced tomatoes and cook for 5 minutes.

Stir in sour cream (if using).

In a large bowl, combine cooked pasta, tomato mixture, and Ukrainian cheese.

Season with salt and pepper to taste.

Transfer pasta mixture to a baking dish and top with additional Ukrainian cheese.
