Mediterranean Beef Stew

Ingredients
- β1 1/2 pounds Beef stew meatCut into 1-inch cubes
- β2 tablespoons Olive oil
- β1 large OnionChopped
- β3 cloves GarlicMinced
- β2 teaspoons Mediterranean seasoning
- β1 cup Beef broth
- β1 can (14.5 oz) Diced tomatoes
- β1/4 cup Red wine (optional)
- β1/4 cup Fresh parsleyChopped

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the beef to the pot and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside.

Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

Add the Mediterranean seasoning to the pot and cook for 1 minute.

Add the beef broth, diced tomatoes, and red wine (if using) to the pot.

Return the beef to the pot and bring the stew to a simmer.

Reduce the heat to low and cook, covered, until the beef is tender, about 2 1/2 hours.
