Spotted Dick
A traditional British steamed pudding made with suet and dried fruit.
Ingredients
- β1 cup Suet
- β2 cups All-purpose flour
- β1/2 cup Dried fruit (currants or raisins)
- β1 cup Light brown sugar
- β1 Large egg
- β1 cup MilkWhole milk or a non-dairy alternative
- β2 tablespoons Butter or margarine
- β1 teaspoon Jubilant mixed spice
- β1/4 teaspoon Salt

1. In a large mixing bowl, combine the suet, flour, dried fruit, sugar, and mixed spice.

2. In a separate bowl, whisk together the egg and milk.

3. Add the egg mixture to the dry ingredients and stir until well combined.

4. Add the melted butter or margarine and stir until the mixture is smooth.

5. Grease a 1-pint pudding basin or a heatproof bowl with butter or margarine.

6. Transfer the pudding mixture to the prepared basin or bowl.

7. Cover the pudding with a piece of parchment paper or aluminum foil, tied with string.

8. Place the pudding in a large pot or steamer, and add enough boiling water to come halfway up the side of the pudding.

9. Steam the pudding for 2 hours, or until it is cooked through and firm to the touch.

10. Remove the pudding from the steamer and let it cool for 10 minutes.

11. Serve the pudding warm, with custard or whipped cream if desired.
