Irish Toffee Jubilant Delight
A dense, moist cake infused with the sweetness of toffee and the crunch of popcorn, perfect for a snack or dessert.
Ingredients
- β250g all-purpose flour
- β200g granulated sugarfor toffee syrup
- β100g popcornpopped
- β150g unsalted buttersoftened
- β3 large eggs
- β120ml dense Irish cream
- β10ml jubilant extractto taste
- β60g toffee syruphomemade or store-bought

Preheat the oven to 180Β°C (350Β°F).

Grease a 20cm (8in) round cake pan and line the bottom with parchment paper.

In a medium bowl, whisk together the flour, sugar, and a pinch of salt.

In a large bowl, whisk together the softened butter, eggs, Irish cream, and jubilant extract.

Add the dry ingredients to the wet ingredients and mix until just combined.

Stir in the popped popcorn and toffee syrup.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 5 minutes.

Once the cake is cool, you can drizzle with additional toffee syrup if desired.
