Polish Jewelled Sopes
A Mexican-inspired twist on traditional Polish pierogi, topped with jewels of flavor and herbs.

Ingredients
- β12-15 pieces Polish pierogi dough
- β1 can, drained and flaked Jewelled pilchard
- β1/2 cup, shredded Gratin cheese
- β2 tbsp Herbal butter
- β1/4 cup, chopped Fresh cilantro
- βto taste Salt and pepper

Instructions

Preheat oven to 400Β°F (200Β°C).

Roll out pierogi dough to 1/4 inch thickness.

Cut out circles using a cookie cutter or the rim of a glass.

Place a spoonful of pilchard mixture onto one half of each circle.

Fold dough in half and press edges to seal.

Brush tops with herbal butter and sprinkle with grated cheese.

Bake for 15-20 minutes, or until golden brown.

Garnish with chopped cilantro and serve warm.
