Japanese-Style Takikomi Gohan
A traditional Japanese dish with jeweled vegetables and lemons, made gluten-free for a healthier option.
Ingredients
- β1 cup Japanese short-grain rice (gohan)
- β1 lb Chicken breastcooked to 165Β°F
- β1 cup Jeweled vegetables (such as carrots, green beans, and peas)
- β2 Lemons
- β2 tsp Takikomi seasoning
- β2 tbsp Soy sauce (gluten-free)
- β1 tsp Sesame oil
- β1/4 cup Green onions
- β1 tsp Sesame seeds

Rinse the rice and soak it in water for 30 minutes.

Cook the rice in a rice cooker or on the stovetop until it's tender.

Cut the chicken into bite-sized pieces and season with salt and pepper.

Heat a pan with sesame oil and cook the chicken until it's browned and cooked through.

Add the jeweled vegetables to the pan and cook until they're tender.

Stir in the takikomi seasoning and soy sauce.

Squeeze the lemons over the top and sprinkle with green onions and sesame seeds.
