Malaysian Tempeh Bowl
A vegetarian bowl dish inspired by Malaysian cuisine, featuring marinated tempeh and a variety of vegetables.
Ingredients
- β1 block (250g) tempeh
- β2 tablespoons coconut oil
- β2 tablespoons soy sauce
- β1 tablespoon honey
- β1 tablespoon rice vinegar
- β1/4 cup chopped cilantro
- β1/4 cup chopped scallions
- β1 cup cooked brown rice
- β1 cup roasted vegetables
- β1/2 cup pickled cucumber

Marinate the tempeh in a mixture of soy sauce, honey, rice vinegar, and coconut oil for at least 30 minutes.

Preheat a non-stick pan or grill to medium-high heat.

Cook the tempeh for 3-4 minutes per side, or until golden brown and crispy.

Cook the brown rice and roasted vegetables according to package instructions.

To assemble the bowl, place a scoop of brown rice in the bottom, followed by the marinated tempeh, roasted vegetables, pickled cucumber, and chopped cilantro and scallions.
