Kenyan Beef Stew
A hearty and flavorful stew originating from Kenya, made with tender beef and a blend of aromatic spices.
Ingredients
- β1 pound beef stew meatcut into 1-inch cubes
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons tomato paste
- β1 jagged red chili pepperssliced
- β2 cups savory beef broth
- β1 tablespoon kenyan spicesa blend of turmeric, coriander, and cumin

Heat oil in a large pot over medium-high heat.

Add the beef and cook until browned, about 5 minutes.

Add the onion and garlic and cook until the onion is translucent, about 3 minutes.

Add the tomato paste and cook for 1 minute.

Add the sliced red chili peppers and cook for 2 minutes.

Add the beef broth and bring to a boil.

Reduce the heat to low and simmer for 1.5 hours, or until the beef is tender.
