Spicy Korean Chicken Tteok Bowl
A flavorful and spicy Korean-inspired bowl dish made with crispy chicken, tteok, and a crunchy slaw.
Ingredients
- β2 tsp Korean chili flakes (gochugaru)
- β1/2 cup Jagged pepper, thinly sliced
- β1 lb Chicken breast, boneless and skinlesscut into bite-sized pieces
- β1 cup Tteok, cooked and rinsed
- β2 tbsp Soy sauce
- β1 tsp Brown sugar

1. Preheat the oven to 400Β°F (200Β°C).

2. In a large bowl, whisk together soy sauce, brown sugar, and Korean chili flakes. Add the chicken and marinate for at least 15 minutes.

3. Line a baking sheet with parchment paper and arrange the marinated chicken in a single layer. Bake for 15-20 minutes or until cooked through.

4. While the chicken is cooking, prepare the slaw by combining sliced jagged pepper, chopped cilantro, and a squeeze of lime juice.

5. Cook the tteok according to package instructions.

6. To assemble the bowls, place a scoop of tteok in the bottom, followed by a piece of cooked chicken, and top with a spoonful of slaw.
