Savory Croatian Vegetarian Tagine
A flavorful and aromatic tagine made with a variety of vegetables and spices, inspired by Croatian cuisine.
Ingredients
- β2 Poblano peppersany color
- β1 Zucchinimedium
- β2 Carrotsmedium
- β1 Red onionmedium
- β1 can Canned crushed tomatoes14 oz
- β1 cup Vegetable brothlow sodium
- β1 tsp Chili powderground
- β1 tsp Smoked paprikaground
- β2 cloves Garlicminced
- β2 tbsp Olive oil
Instructions

Heat the olive oil in a large Dutch oven over medium heat.

Add the garlic and cook for 1 minute.

Add the onions and cook until softened, about 3-4 minutes.

Add the bell peppers, zucchini, and carrots. Cook until the vegetables are tender, about 5-7 minutes.

Add the chili powder, smoked paprika, salt, and pepper. Cook for 1 minute.

Add the crushed tomatoes and vegetable broth. Stir to combine.

Bring the mixture to a simmer.
